New Maryville coffee shop offers organic, sustainably sourced products | News

Another small business has joined Maryville’s growing coffee scene, officially debuting at Maryville’s annual Christmas Craft Fair Nov. 15, 2025.

Siskiyou Coffee is a mobile-order-only coffee shop offering organic, craft-based drinks made with beans sourced from an award-winning roaster: Noble Coffee Roasting Company in Ashland, Oregon. The company has won more Good Food Awards than any other roaster in the nation. A Good Food Award is given to businesses that meet standards of quality and sustainability.

The coffee business, owned and operated by Shay Champion, is located in a historic Maryville home at 221 S. Main St. It allows customers to order ahead and pick up their drinks at a scheduled time.

“You can order day-of, any time,” Champion said. “I prepare it at that time, everything is hand-crafted, and then it is put in the cabinet on the porch at the time that you requested.”

The name Siskiyou Coffee comes from the Siskiyou Mountains, which stretch from northwestern California into southwestern Oregon. Champion moved to Maryville from Oregon. She said the Maryville community felt like the perfect place, and the name is a reflection of a place where she once lived and loved.

“I moved here four years ago next month, with the intention of opening a coffee shop,” Champion said. “I told myself that if I was going to move here, I was finally going to do this.”

Inspired by her favorite coffee shops in Oregon, she said she is hoping to bring a home-like comfortable atmosphere to Maryville.

“The coffee shops (in Oregon) were very welcoming, and it was the whole atmosphere and vibe — that all-inclusive area — that I really loved,” Champion said. “I wanted to bring that here.”

Champion said she works full-time in health care operations and has done so remotely since COVID, allowing her to relocate to Maryville. She said the flexibility made it possible to finally pursue opening a coffee business.

Siskiyou Coffee first launched publicly after months of preparation. Champion said she began posting about the shop on social media months in advance and was encouraged by the community’s response.

“We were able to go to the (Christmas Craft) fair and have people approach us saying they had seen us on social media and came just to meet us and see what we were about,” Champion said. “That was really exciting.”

Champion is the shop’s sole employee and handles all aspects of the business herself, from preparing drinks to managing orders and operations. She said she plans to eventually open indoor seating and a small retail space inside the home, which she said is more than 130 years old.

“I definitely will have employees at that point, because I can’t do it all by myself,” Champion said.

As for the beverages themselves, Champion said the Alpine Indulgence latte, a tiramisu-flavored drink, has become a customer favorite. Champion said she develops all of her drink recipes herself, occasionally asking her family for input.

“I love making the drinks,” Champion said. “I love when I run into a customer picking up or hanging out on the porch. It’s nice to have some face-to-face time with them as well.”

With all the new coffee places in the area, Champion said Siskiyou Coffee stands out from other local shops because of its focus on organic and sustainably-sourced products.

“Our coffee is organic,” Champion said. “It’s sustainably sourced — which makes it different.”
